Ushbu maqolada emulsiya holatida ishlab chiqadigan moddalar va ularning
kimyoviy tarkibi tahlil qilinadi. Emulsiyalar – bir-birida erimaydigan suyuqliklar aralashmasidan
iborat kolloid tizim bo‘lib, ularning barqarorligi emulgatorlar yordamida ta’minlanadi. Maqolada
emulsiyalarning turlari, ularning barqarorligini ta’minlovchi kimyoviy komponentlar, ishlab
chiqarish usullari va qo‘llanilish sohalari (farmatsiya, oziq-ovqat, kosmetika va sanoat) keng
yoritilgan. Har bir sohada keng qo‘llaniladigan emulsiya namunalarining tarkibi kimyoviy nuqtai
nazardan ko‘rib chiqilgan va ularning funksional ahamiyati izohlangan.
