The process of isolating polysaccharides from bacteria is widely used in biotechnology, pharmaceuticals, and the food industry. This article provides detailed information on the main polysaccharides produced by bacteria, the methods used for their isolation, and their practical benefits. In particular, the processes of isolating polysaccharides from bacteria such as Escherichia coli and the applications of the products obtained through them, the stimulation of the immune system, and their role in the production of biofilms and bioplastics are discussed.
