Abstract

plant-derived bioactive compounds, notably abundant in foods like pumpkin and
carrots, have garnered considerable interest for their potential health benefits. This study was
aimed to study the effect of probiotics to enhance the nutritional profiles of carrots and pumpkins
during fermentation which may be a source of potential plant-derived bioactive compounds in
enhancing the nutritional profile of fermented foods for preventive medicine and health promotion.
