Ushbu tezisda Capsicum annuum l. qizil qalampir kapsaitsinoid fraksiyalarinining antioksidantlik xossalarini o‘rganish borasida ilmiy tadqiqot natijalari keltirilgan. Qizil qalampirdan ajratib olingan kapsaitsinoidlar Fe 2+ /askorbat ta’sirida yuzaga kelgan mitoxondriyalardagi LPO jarayoniga ingibirlovchi ta’sir qildi va LPO ta’sirida shikastlanishini oldini oldi. Olingan natijalar kapsaitsinoidning yuqori antioksidantlik va membrana faollik xossalariga ega ekanligini isbotlaydi.

Abstract

This thesis presents the results of a scientific study on the antioxidant properties of capsaicinoid fractions of red pepper Capsicum annuum l. Capsaicinoids isolated from red pepper inhibited the LPO process in mitochondria induced by Fe
2+
/ascorbate and prevented damage caused by LPO. The results obtained prove that capsaicinoid has high antioxidant and membrane activity properties.
