Abstract

Enzymes have the unique ability to accelerate chemical reactions under normal conditions. These conditions are moderate temperature, neutral pH and the absence of active reagents. They act as biological catalysts, which makes processes more environmentally friendly, energy-efficient and specific. Enzymes are integral components in many reactions, such as decomposition, softening, acceleration, synthesis and processing. Their application covers many industries, from the food industry to medicine. With their properties, they play a key role in the development of modern biotechnology.
