ISOLATION AND SCREENING OF MICROSCOPIC FUNGI WITH MILK-COATING ACTIVITY

In this study, the isolation and screening of microscopic fungi isolated from various sources (soil, wastewater, lactic acid products) for protease biosynthesis as a substitute for rennet was carried out. As a result, 47 isolates of microscopic fungi and 2 isolates of yeast cultures were isolated, after primary screening, 10 isolates of protease producers were selected
