Abstract

This article discusses lentil (Lens culinaris Medik) as a source of high-quality protein. Lentils belong to the legume family, and their grains are rich in high-quality proteins and other essential nutrients. The article presents scientifically based information on the nutritional value of lentils, their protein composition, and the benefits of this crop for the human body. Lentils can be described as a crop with high efficiency not only in terms of food, but also in terms of agrarian and environmental aspects. The economic and environmental importance of growing lentils and their proper use in the conditions of Uzbekistan is also shown.
