Abstract

This thesis analyzes the properties and compositional classification of two types of sesame seeds. Sesame (sesamum indicum) is one of the oilseed crops cultivated by mankind since ancient times, with high biological and nutritional value. Sesame seeds are distinguished by their high-quality oil, protein, mineral and antioxidant substances. The thesis considers microscopic analysis of sesame seeds.
