Enzyme biotechnology is a scientific field that studies the production of biological catalysts - enzymes - by microorganisms and their application in industrial processes. This article reviews the types of enzymes, the selection of microorganisms, fermentation processes, methods for isolating and purifying enzymes. The importance of genetic engineering and process optimization in enzyme production is also analyzed. Studies have shown that modern biotechnological approaches allow increasing enzyme yield, reducing costs, and improving quality.
