Abstract

In this study, the quantitative composition of water-soluble vitamins in Beta vulgaris L. leaf extract was determined using the HPLC method. According to the results, vitamin B1 was predominant in the amount of 164,790 mg/100 g and B3 in the amount of 116,640 mg/100 g. Vitamin C was 9,553 mg/100 g, confirming the antioxidant potential of the extract. Also, vitamins B2, B6 and B9 were detected in small amounts, and the biological activity of the extract was evaluated. The results obtained showed that beet leaf is a promising natural bioactive source for nutraceutical and functional food additives.
